Breakfast Sandwiches (credit to my brother’s breakfast experiments)
This is like an egg McMuffin, but better.
All you need:
- Whole Wheat English Muffin
- 1 Egg (scrambled in a small circular bowl about the same size as the english muffin, spray with olive oil before putting raw egg in it)
- Cheese and/or ham (optional)
- Butter (optional)
- Microwave & Toaster
Put English muffin in toaster, while waiting for english muffin to toast scramble egg in non-stick bowl, place in microwave for 50 seconds, take out of microwave promptly, place couple slices of cheese on top of egg (so it can begin to melt), then squish between to the 2 slices of toasted english muffin. Enjoy!
Spider Web Crepes
Kids love these! You can roll ‘em up or pull ‘em apart. Put stuff on them or eat them plain (we put butter, lemon juice and a light sprinkle of sugar on ours). High in protein and calcium. This is a regular crepe recipe so you can also make crepes the traditional way with this batter.
All you need:
4 Eggs
2 Cups Flour
3 Cups milk
2 tsp Salt
Butter of Margarine (for the pan)
Put first 4 ingredients into blender. Blend until flour chunkies are gone. Pour into hot (buttered) crepe pan or a frying pan that sits flat and create whatever designs you want. You’ll figure it out.
BANANA BIRTHDAY CAKES
This is a fantastic snack for kids. They’re bite size, healthy, and super easy to make.
All you need:
- Banana (preferably not overripe)
- Peanut Butter
- Raisins
Cut Banana (“the cake”) into bite size pieces. Dallop with peanut butter (“the icing”). Top with a raisin (“the candle”).
YOGURT WITH CRUNCHY STUFF
(sorry no pic)
My kids eat this pretty much every day. It’s high in fibre, low in fat and it tastes really good!
All you need is:
- Yogurt of your choice
- All Bran Buds
Sprinkle a generous amount off All Bran Buds onto your yogurt. Mix. Enjoy!
HIDE THE VEGGIES DON’T-WASTE-YOUR- TIME-CHOPPING-ANYTHING PASTA SAUCE
If you have a hand blender, drop a bunch of raw (washed and seeded) veggies into some olive oil and let simmer until soft. No need to finely chop anything. You can cut a bit if you like but it’s not necessary.

All you need is:
- Veggies (any variety and as much or as little as you want). In this batch I have celery, peppers, and carrots. You can also add, spinach (fresh or frozen) or zucchini. I’d stay away from cauliflower and broccoli (flavour is too overpowering)
- Garlic (to taste)
- Onions (to taste)
- Tomato paste (optional)
- A couple cans of tomatoes (crushed, diced, stewed, whole, or fresh). You can even use V8 juice if you don’t mind a runnier sauce
- Basil & Oregano (to taste)
- Salt n’ Pepper
- Pasta Noodles
- Parmesan cheese (optional)
Saute garlic and onions. Add veggies. Sautee some more. Add tomato paste. Simmer and stir for 5 min. Add cans of tomatoes and a splash of water. Simmer on low anywhere from half hour to 4 hours. Add spices. Puree with hand blender. Serve on noodles of your choice with sprinkled with Parmesan cheese.
